(Also, looking at your Ubiquity syslog, it looks like your hardware may be failing - I see possible network errors, segfaults, and possible disk and filesystem problems in the log. I would highly recommend running a RAM check using MemTest86, which can be downloaded from https://www.memtest86.com/. The free version should work fine. I would download this on a computer other than the one you're trying to install Ubuntu on.)

I'd suggest checking the health of your drive (sdb) using it's inbuilt SMART.
