How to change from the default US grading scheme?

Hi, I teach in a secondary college in Victoria, Australia. We do not use the US grading system A, B, C, D, F. We use A, B, C, D, E, N instead. The cut-offs for these are 90%, 80%, 70%, 60%, 50%, 0. Where can I make this adjustment or add it to the available choices?
A second question is: is it possible to export grades data into Excel, OooCalc, .csv etc? Some configurable hard copy would be neat!
