Temporary files are usually stored in the hidden directory .sabnzbd/incomplete in your home folder. In older configurations, it might also be in Downloads/Incomplete.

If you want to change the location of this folder, you will need to use the web interface (File -> Open Web Interface).

I changed this in the web interface in config/directories.
