The user is prompted for a passphrase to use when backing up or restoring. That passphrase is stored by the GNOME keyring manager in the user's home directory (~/.gnome2/keyrings).

You can run the program 'Applications -> Accessories -> Passwords and Encryption Keys' (or the command 'seahorse'). Then look at the Passwords tab. You should be able to change/delete saved passwords there.
